Sorry for the totally elementary question, but this wasn't in the FAQ mods section.

Is there any performance advantage to changing a sprocket cover? Or is it for looks and weight?

No benefit what so ever. The sproket cover is for safety. If your chain were to break, the sproket cover will stop the chain from hitting your engine or your leg.

has anyone EVER seen a sprocket cover for a 97 M750??
they are a little different than all the rest.

whoa.... i'm sorry andrew but i wouldn't count on that. if the chain snaps, just prey no part of your body's in the line of fire cuz it'll knife right through the plastic...
the cover's really there so you don't (hopefully) get your toes caught in the chain running upto the sprocket where they become hamburger.

Thus the reason I have a metal one on my bike.
