Is there any(much) difference between these bikes as far as handling
and more importantly..being able to control the power...want a smooth
throttle/power delivery for around town and 2-laners....

If the above handling means flickability and smooth power application, am I
better off looking at 696 and 796??

The new generation of Monsters handles much better than the old. The S4 Monster chassis was never quite up to the power; that's why they discontinued it and replaced with the StreetFighter. Which you might well add to your list and look at -- the best of both worlds.
