does the fitting where the oil pressure switch is, produce an accurate reading for a manual gauge? not having any experience with the clutch side of the engine yet, it just seems like just a hole in the clutch cover couldn't have a good pressure reading. i'm sure there's more than what i can see from the outside.

yes, you can unbolt the pressure sensor and connect a manual one so you can check what pressure the engine is running at, keep in mind that at that moment the oil pressure light on the dash will remain on since you removed the sensor previously.

I use mechanical direct screw in gauges made for Harley and they seem to read pretty consistently from gauge to gauge and bike to bike. Get the 0-100 ones.

which gauge is everyone running? i found mini gauges by drag and a couple other companies, but they're all about $85+. i found some sunpro gauges that are 1 1/2in dia. for about $20. an i just a cheap ass?
