I have a 99 monster 750 that got into an accident. I found an 01 monster 600 rim. The 01 monster 600 rim has the dual brake discs, while my OG has single. Can i just take off my single brake disc and plug and play? Or would i have to convert to dual?

I would say just try and take off the disc and see if everything lines up. You can always upgrade it later to a dual disc setup. Anything is possible if you are creative enough.

Yep.
It's the same wheel just the single disk has the plastic cover to hide the bolt holes for the second disk.
Just swap that over.

Just check which end of the wheel arm is the fat end.
Earlier wheels with the fat end at the rim usually have a smaller axle than the later wheels with the narrow end at the rim.
3 arm wheels that is.
