I have to admit I'm biased about trackday providers since I work with STT. But in fact I started my track riding with Keith Code's CSS Level I back in 2002 and then started with STT Novice classes for over a year until they booted me up to Intermediate. I like STT because of the structured learning experience for Novice riders (who usually are scary fast by the end of the weekend) and the emphasis on safety for all levels.
STT will have the season opener for Southern Division at Moroso on Feb 18, 2007. The rest of the schedule shoud be published in early December. There should be at least one date at Jennings and at least one or two dates at Homestead. Homestead is one of those tracks not to miss. Great place whether dry or wet.
