As a general rule, fashion leather is not motorcycle leather. They're rugged looking without being rugged. Fashion leather jackets are not stitched or otherwise designed to withstand even a single crash. Even though they're technically leather, they'll often rip or blow apart on impact before your body stops moving (i.e. welcome to the meat grinder).

Take a look at of the midrange or high end (not the fashion stuff) offerings from Alpinestars, Dianese, Vanson, or any other motorcycle-specific producer. The leather is THICK (1.5mm). The jackets are double-stitched, with thick and hidden stitching that won't burn off or blow apart in a slide.

Do you think these jackets would be safe for easy 60 mph riding?

Safe? No. They have absolutely no armor, are thin leather, will ride up your arms and torso in a slide. You don't have to dress like a power ranger (though I do). But you should get a moto-specific jacket with at least some armor. 60 mph is FAST when you're on the asphalt sliding around or tumbling.

Better than a T-shirt? Yes.

If you're looking to save some $ and to have a slight less boy-racer look, there is a wide selection of plainer looking gear out there. For example: http://www.newenough.com/tour_master_coaster_jacket_page.htm (Monsterhooligan swears by the Courtech stuff) and http://www.newenough.com/alpinestars_one_o_one_jacket_page.htm

absolutely.

60mph crashing? hell no. ;)

(get a real moto jacket with armor in it, also...moto jackets are designed with the riding position in mind, a fashion jacket may not fit right with your arms forward.)
