Tail " chop" is more of a replacement rear tail section than an actual chop, like the monsters of the past. There is no way to chop the tail with a dremel and get a nice result. There are several options for tails. Check Monsterparts, a sponsor of this site.
The touring seat is a must for daily riding in my opinion. The stocker puts you in a awkward too close for comfort relationship with the family jewels and the tank.
Another great option is to drop the front sprocket to 14 teeth. With your pipes and ecu, you will find this mod to be the best bang for the buck. Leaving from a dead stop requires almost no gas once yet ease out of the clutch. The grab zone is dramatically changed once rolling on. I was starting to really dislike the bike before the front sprocket change. Now I love it. No more low speed jerking around!
