Taking lots of turns slowly on a motorcycle is a lot harder than taking them faster.

I agree with others, take a course if available to you.

I felt the same exact way going from a cruiser to the monster. I could scrape the pegs and lean all day-long on my honda shadow, but when i got on the monster I would always get that feeling that i would tense up. I think it has to do with the center of gravity and riding position of the bike. I was used to my lean back on my shadow, now i am leaning forward. And also, my hips are muuuuch higher than they used to.
Aside from the awkward feeling, however, physics remain the same. Countersteering and a smooth throttle increase through the turn are universal riding techniques regardless of your bike!

it may be a small thing, and I am by no means a pro, but I feel that focusing on holding my body upright with my core, and gripping the tank with my knees, takes the weight off my grips, thereby making slow turns much easier.

I'm going to go out on a limb, and guess most of the problem is your head position. You go where you look, and many noob riders do not look through the turn to the exit. Further, the slower they go, the closer to the front of their bike their eyes focus. Even in a parking lot doing u turns, you have to crank your head around as far as you can to see the exit of the turn. Give it a try.

My opinion,

On the 250 you were able to ride the piss out of it. You could probably run 15mph in 2nd or 3d gear. Now with the 796 you will stall trying to run 15mph in 3rd gear. What you ae experiencing is way more torque than you are used to at the throttle. Also the ride position is completely different. You are much more top heavy than you used to be and are in a more sporting position than on the cruiser.

The thing I loved about my Derbi GPR50 was the ability to push it around now with my Ducatis I can't push them as much. Now I ride.
